The useful answer

Bavarian-style wheat beers use a large share of wheat and expressive yeast. The banana and clove impressions normally come from fermentation compounds, not added fruit or spice.

Where it came from

Wheat contributes protein, haze, a generous head and a soft, creamy impression. Traditional hefeweizen remains cloudy because yeast is present; kristallweizen is filtered clear.
